An olive tree variety native to the north of the province of Castellón, its cultivation extends over a large part of the province and especially in the Baix Maestrat, and to the south of Tarragona, where it represents more than 70% of the total surface area. Some 14,000 hectares, almost all of which are confined to Castellón. Between Tarragona and Lérida, another 7,000 hectares can be added.
It is a variety of high production, but irregular, considered very neighbouring. It is a rustic variety, slow to start production and sensitive to frost. The fruit has a high retention force, which, together with the large size of the trees, makes both manual and mechanical harvesting difficult.
Low fat content variety and therefore low yield. With regard to its composition, it has a medium oleic acid content of around 72% and a linoleic acid content of around 11%, which, together with a medium polyphenol content, results in medium stability. It is an early variety, whose optimum harvesting time can be mid-October. Earlier harvesting to the first days of October makes it possible to obtain oils with higher fruitiness and excellent organoleptic characteristics, but with a very low yield.
It is grown mainly in Castellón, Tarragona and Lérida. Its extra virgin olive oils are characterised by their intense flavour, with notes reminiscent of almonds and walnuts. There are thousand-year-old olive trees of this variety in the Iberian Peninsula.
Extra virgin olive oil
The extra virgin olive oil of the Farga variety is a fruity and sweet oil, very little spicy and not at all bitter. It is an oil with a complex aromatic profile with aromatic notes of banana, almonds, green grass and aromatic herbs.
