Sevillenca
The Sevillenca variety is also known as Solivec, Sevillana and Sevillenc. It is mainly grown in the Bajo Ebro-Montsià region in the provinces of Tarragona and the north of Castellón. Its cultivation area is 15,000 ha. It is considered a local variety.
It is a vigorous variety, not very productive and regular in production, precocious at the beginning of production and early ripening. It has little resistance to detachment, which, together with its structure, makes it well adapted to mechanised harvesting.
Not very rustic variety, with medium resistance to cold and not very resistant to drought. It has a good fat content and acceptable extractability. Its oils show a medium-high oleic acid content and a medium level of polyunsaturated fatty acids, which determines the fluidity of its oil.
Extra virgin olive oil
The oil of the Sevillenca variety is characterised by its fragrance. Very fruity oil with a slight taste of green apple, slightly bitter and more spicy, somewhat astringent, but with a sweet and smooth flavour. A clear taste of almond, wood and banana.
